Pink Pitaya Chia Yogurt Popsicles

Makes 4 large popsicles
Chia Layer Ingredients:
¼ cup + 2 tbsp vanilla oat milk
2 tbsp Raw Black Chia Seeds (from Suncore Foods®)
2 tbsp dairy-free vanilla yogurt
1 tbsp maple syrup (optional – adjust as per yogurt sweetness)
Pink Pitaya Yogurt Layer Ingredients:
1½ tsp Pink Pitaya Supercolor Powder from Suncore Foods®
2 tbsp vanilla oat milk
1 cup dairy-free vanilla yogurt
1-2 tbsp maple syrup (optional – adjust as per yogurt sweetness)
You will need:
4 large popsicle molds
Chia layer: Combine chia layer ingredients and set aside for 10-15 minutes until the chia seeds activate and the mixture is creamy. Stir the mixture once or twice so the chia seeds don't settle at the bottom.
Pink Pitaya Yogurt layer: Dissolve Pink Pitaya Supercolor Powder into 2 tbsp of milk. Combine the Pink Pitaya-milk mixture with remaining ingredients.
Assemble popsicles: Spoon each layer into popsicle molds in patches. Start with one corner of the mold and add 1 spoon (spoon size as per preference) of the creamy chia layer. Add 1 spoon of the pink pitaya yogurt next to the chia mixture. Continue this process until the mold is full.
Follow step 3 for the remaining molds and freeze for minimum 8 hours, preferably overnight.
