Pink Pitaya Chia Yogurt Popsicles

Ingredients

Chia Layer Ingredients:

  • ¼ cup + 2 tbsp vanilla oat milk
  • 2 tbsp Raw Black Chia Seeds (from Suncore Foods®)
  • 2 tbsp dairy-free vanilla yogurt
  • 1 tbsp maple syrup (optional – adjust as per yogurt sweetness)

Pink Pitaya Yogurt Layer Ingredients:

  • 1½ tsp Pink Pitaya Supercolor Powder from Suncore Foods®
  • 2 tbsp vanilla oat milk
  • 1 cup dairy-free vanilla yogurt
  • 1-2 tbsp maple syrup (optional – adjust as per yogurt sweetness)

You will need:

  • 4 large popsicle molds

Instructions

  1. Chia layer: Combine chia layer ingredients and set aside for 10-15 minutes until the chia seeds activate and the mixture is creamy. Stir the mixture once or twice so the chia seeds don't settle at the bottom.
  2. Pink Pitaya Yogurt layer: Dissolve Pink Pitaya Supercolor Powder into 2 tbsp of milk. Combine the Pink Pitaya-milk mixture with remaining ingredients.
  3. Assemble popsicles: Spoon each layer into popsicle molds in patches. Start with one corner of the mold and add 1 spoon (spoon size as per preference) of the creamy chia layer. Add 1 spoon of the pink pitaya yogurt next to the chia mixture. Continue this process until the mold is full.
  4. Follow step 3 for the remaining molds and freeze for minimum 8 hours, preferably overnight.
