Ingredients

Supercolor Powders from Suncore Foods®:

  • 1 tsp Aqua Blue Spirulina
  • 1.5 tsp Premium Midori Jade Matcha
  • 1 tsp Vermillion Annatto
  • 1 tsp Cerise Prickly Pear

Chia Seed Layer:

  • ¼ cup + 1tbs Chia seeds
  • ½ cup coconut cream
  • ½ cup vanilla flavoured coconut yogurt
  • ½ tsp lemon zest
  • ¾ tsp lime juice
  • 1 tbs maple syrup (or to taste)

1 Color Layer: Multiply all ingredients by 3 for each remaining colored layer.

Equipment Needed: Popsicle molds

Instructions

  1. Start with the Chia Seed layer – Place all ingredients plus 1 supercolor in a blender. Blend until smooth and well combined. Transfer mixture to a bowl and mix in chia seeds, set aside for 15 minutes.
  2. While the chia seeds activate, prepare remaining layers. Place all ingredients plus 1 supercolor in a blender. Blend until smooth and well combined. Transfer to a jar/bowl and set aside. Don’t mix any colors and follow the same process for each Supercolor.
  3. Assemble into molds – Once you have all 4 colors ready (chia layer + 3 more), start by equally dividing the chia seed Supercolor mixture into 10 popsicle molds. Follow the same process and one-by-one layer each Supercolor until there is no mixture remaining.
  4. Freeze overnight and allow the popsicles to thaw for 5 minutes before removing from molds and serving.
