Makes 1 cocktail


Raspberry Days Gin Cocktail Ingredients:

  • 1 oz raspberry purée
  • 1 oz raspberry liqueur
  • Splash of lemon juice
  • 2-3 oz club soda
  • 1 – 1½ oz gin


  • ½ lemon slice
  • 3 fresh raspberries
  • 1 fresh mint sprig or 4-6 leaves

Optional - DIY Raspberry purée:

  • 340 g fresh raspberries
  • 30 g water
  • 4 g pure vanilla extract
  • 15 g sugar

Note - If you're preparing the raspberry purée from scratch, the recipe time increases by minimum 30 minutes.


Raspberry Days Gin Cocktail:

  1. Stir raspberry purée, raspberry liqueur and lemon juice until well combined. Pour mixture over ice in a cocktail glass. Add club soda and layer gin on top. Stir and garnish with lemon, raspberries and mint.

Note - Use your own raspberry purée or follow the recipe provided to make the purée from scratch. If the raspberry purée you use is not sweet, add simple syrup to taste when mixing in the purée, liqueur and lemon juice.

DIY Raspberry purée:

  1. Place raspberries and water in a saucepan and bring to boil. Reduce heat to medium-low and mix in vanilla extract and sugar.
  2. Cook for 10-15 minutes, until the raspberries are very soft. Stir every 3-4 minutes and gently break apart and mash the raspberries while stirring.
  3. Remove from heat and allow the mixture to cool to room temperature in the saucepan itself. Transfer mixture to a blender and blend until smooth.
