Apple Crumble

Ingredients

  • 5 medium apples (Royal Gala preferred)
  • 1 tbs lemon juice
  • 3 tbs + 1/2 cup coconut sugar (or brown sugar)
  • 1/2 cup gluten-free oats
  • 1/2 heaped cup quinoa flakes
  • Pinch cinnamon
  • Pinch salt
  • 1/3 cup vegan butter, softened
  • Optional - Vanilla ice cream to serve

Cooking Notes:

  • Substitute coconut sugar with brown sugar
  • Substitute quinoa flakes with oats i.e. total oats used will be 1 cup
  • If needed, you can add 2-3 tbs more of butter

Equipment Needed:

  • 8 x 10” baking dish (or of similar dimensions) with minimum depth/height of 2”

Instructions

  1. Preheat oven to 350º F.
  2. Peel, core and cut apples into bitesize pieces. Transfer apples to a large bowl. Add lemon juice and 2 tbs sugar. Toss the apples allowing all ingredients to mix well. Transfer prepared apples to a baking dish and cover while preparing the crumble.
  3. Combine oats, quinoa flakes, cinnamon and salt in a large bowl. Mix in ½ cup + 1 tbs of sugar and butter. Using a fork or spatula combine ingredients.
  4. Using your clean hands mix the mixture some more until very well combined and form crumble clusters. No dry flakes or oats should be visible. Add some more butter if needed.
  5. Place crumble clusters on the prepared apples coating the entire baking dish ensuring the sides are covered. Sprinkle any leftover crumble mixture.
  6. Bake for 45-60 minutes until the crumble crust is golden brown and the sides are bubbling. Allow crumble to cooldown for a few minutes before serving. Optional - serve with vanilla ice cream.
